Carolyn Niethammer has written a most excellent book called "The Prickly Pear Cookbook" on the many ways one can prepare prickly Pear Cactus.
This book has over fifty recipes from all over the world, including Victoria's French Fried Cactus (Vickie's own recipe) and Carolyn was kind enough to list us as a source for the fresh cactus. Thanks Carolyn, and this is a very good book, good job!
